THE IL MOLINO CAFÉ IS LOCATED IN THE HEART OF OUR PRODUCTION MILL AND ALSO BOASTS A LARGE, DELIGHTFULLY FURNISHED GARDEN TO SPEND SUMPTUOUSLY RELAXING MOMENTS. IT IS WHERE YOU CAN TASTE SWEET AND SAVORY BAKED GOODS, PASTRIES AND EVERYTHING THAT WE CREATE AND PRODUCE EVERY DAY IN OUR LABORATORY. THE FLOURS USED ARE PRODUCED WITH THE COMPANY’S STONE MILL AND COME FROM OUR ORGANICALLY GROWN GRAINS.

NATURALLY FERMENTED SOURDOUGH BREAD
Our secret lies in the long, slow rising process, which allows the bread to develop a unique flavor, a crunchy crust and a honeycombed crumb, with a fragrance that will win you over from the first bite.
Every part of the breadmaking is carefully done by hand. Our sourdough starter is lovingly nurtured every day, creating the perfect environment for slow, natural fermentation. This artisanal process ensures high quality, healthy and easily digestible bread. We experiment with the seasonality of our garden by adding ingredients such as pumpkin, spinach, potatoes, and beet into the doughs of some of the breads, and combine them with different kinds of seeds and charcoal.

Our puff pastries, both sweet and savory, are handmade, one by one. We use the French method—with butter and no eggs—to make light, crisp, puff pastries with an authentic taste. We use only the highest quality ingredients including the organic produce from our fields such as fresh and dried seasonal fruits and vegetables for fillings and toppings. Not to be outdone, we also make savory puff pastries with fillings for every taste, crisp, tasty crackers flavored with our fresh herbs, Apulian-style taralli, Umbrian rolls and gourmet sandwiches.
